pH stability of RsEGm. The pH stability assay was investigated by first pre-incubating RsEGm in 50 mM B & R buffer at different pH values (pH 4.0 to 11.0) at 4°C for 1 h, 5 h, 24 h, and 120 h respectively. The residual activities were then measured immediately under standard conditions (optimal pH, 37°C for 15 min). The initial activity at optimal pH (5.0) and 37°C (6.7 U/mg) was taken as 100%, and the percentage of the residual activity at different time points and pH values against the original one at optimal pH (5.0) was calculated.
