Thermal stability of RsEGm. RsEGm was pre-incubated for varied times (15 min to 2 h) at pH 5.0, and 30°C, 40°C and 50°C respectively, and samples were chilled on ice for at least 10 min. Afterwards the residual activities were measured under standard conditions (optimal pH, 37°C for 15 min). The original activity at pH 5.0 and 37°C (6.7 U/mg) was taken as 100%, and the percentage of the residual activity at different time points and temperatures against the initial one was calculated.
