Influence of enzyme concentration on products synthesized by ISlA4 as observed by HPAEC-PAD analysis. Reactions were carried out at three different enzyme concentrations (i.e., 1, 5 and 10 U mL−1 of IslA4) with 292 mM of sucrose at 30°C in 50 mM phosphate (pH 6.0) containing 1 mM CaCl2, and were allowed to proceed until they reached a sucrose conversion of approximately 90%. Identified oligosaccharides: 1) 1-kestose; 2) 6-kestose; 3) neokestose; 4) nystose; and 5) f-nystose.
