Efficiency of β-glucosidase on lactose hydrolysis in milk with glucose. A. Lactose hydrolysis was measured at 65°C for 30 min using 311 U/ml β-glucosidase enzyme with increasing concentrations of glucose ranging from 0-5% as indicated. All data are presented as the mean ± SD of triplicate determinations. B. HPLC analysis of the reactions performed at 65°C for 30 min using 311 U/ml β-glucosidase enzyme with the addition of 0% glucose (Panel 1), 1% glucose (Panel 2), 2% glucose (Panel 3), or 5% glucose (Panel 4).
